ASA/WISHH Sends Baking Consultant to Guatemala

This month ASA’s World Initiative for Soy in Human Health (WISHH) program sent Sergio Serna Saldivar to Guatemala to give technical assistance to bakers in Guatemala City. Serna held a seminar and one-day practical baking course for 25 participants.

The seminar, entitled "Use of Soybean Products in Bakery Goods", was held at INTECAP (Instituto Técnico de Capacitación y Productividad Guatemala C.A.) and focused on the inclusion of defatted soy flour in baked goods. Attendees included personnel working in key bakeries throughout Guatemala as well as students focused on baking at INTECAP.

The bakers were interested in the use of soy flour because its inclusion increases yields and improves the protein quality of their products.
