Soyfoods Featured at ASA’s Congressional Lunch

Healthful, Diverse & Delicious Foods Enjoyed by All

March 13, 2007... Washington, D.C. Members of Congress, congressional staff, government officials, and farmer leaders enjoyed a luncheon featuring a wide-variety of tasty soyfoods and beverages at the American Soybean Association’s (ASA) fifth annual Congressional Soyfoods Lunch on Capitol Hill today. Approximately 400 people attended the event, which showcased a mouth-watering selection of foods and beverages made from soybeans.

“The annual Congressional Soyfoods Lunch on Capitol Hill becomes bigger and better each year,” said ASA President Richard Ostlie, a soybean producer from Northwood, N. Dak. “It provides a unique opportunity for the U.S. soybean industry to give Members of Congress, their staff, and other government officials, a taste of the ever-expanding selection of fabulous soyfoods and beverages available today.”

The 2007 Congressional Soyfoods Lunch menu included:

  • Chicken Fricassé with Edamame Braised chicken breast with edamame beans in a white wine sauce with cream and soy milk;
  • Pasta with Arugula and Roasted Tomatoes Soy pasta with wilted arugula, roasted tomatoes and olives;
  • Couscous with Soy Black Beans Couscous with soy black beans, diced carrots and zucchini and toasted almonds tossed in a honey mint vinaigrette (soy oil used in vinaigrette);
  • Romaine and Radicchio Salad with mushrooms, sweet pepper, spiced pecans and soy parmesan tossed in a creamy tofu ranch style dressing;
  • Assorted Cookies Oatmeal raisin soy cookies, chocolate chip soynut cookies and cranberry apricot oatmeal soy cookies
  • Soy beverages

“Each year, soyfoods play an increasing role in American diets. Long recognized for their nutritional value, today more innovative and palate-pleasing soy foods are available than ever before,” added Ostlie.
