Hamilton met with the research and development staff of six companies, where he provided expertise on product formulations and ideas for new products.  On Saturday, Dec. 13 he spoke at an ASA/WISHH-organized conference on “Soy Protein Use and Benefits for the Meat Industry.” There is a growing interest with food processing companies on using soy proteins as meat extenders, especially in chicken nuggets.

Funding for Marcus Hamilton’s trip was provided by the USDA’s Emerging Markets Program (EMP).
