Last month, the World Soy Foundation (WSF) partnered with the National Soybean Research Laboratory (NSRL) and local non-governmental organization CEPUDO to execute four health and nutrition fairs focused on nutrition, hygiene, the importance of protein and the benefits of a soy-enriched diet in San Pedro Sula, Honduras.
The project was funded by the Michigan Soybean Promotion Committee and also included the shipment of a container of Michigan soybeans to be used in soy dairy production in Honduras. The fairs reached 264 children and were held at a public daycare center, a home for children living with HIV/AIDS, a center for malnourished children and a home for at-risk youths. While the children enjoyed games and other activities focused on soy and nutrition, the cooking staffs of the various institutions were taught how to include soy products in local foods to improve their nutritional content. All of the children reached by the fairs receive soymilk on a daily basis that is produced by CEPUDO using the Michigan donated soybeans. Approximately 200 liters and 60 lbs. of okara (the fibrous pulpy residue which is a by-product of soymilk production) are produced daily by CEPUDO and distributed to local institutions such as day care centers, feeding centers, orphanages and group homes. The soymilk provides much needed protein to over 3,000 children per week. WSF’s partnership with CEPUDO is one of the many ways the foundation is working to reduce malnutrition through the power of soy.
